The staple diet of the people consists of grains and tubers. Alloca (friend plantains) is the national dish of the country. Attiéké (grated cassava) is a popular side dish. Other popular dishes are braised chicken and fish served in onions and tomatoes and kedjenou, a chicken dish made with vegetables and a mild sauce. N’voufou is prepared from mashed bananas or yam mixed with palm oil and served with aubergine sauce. Bangui, a local wine made from palm, is the national drink.
