The staples of a Malian diet are millet and corn. Flour is prepared as a thick porridge and dipped in a leaf or vegetable sauce. Tiga diga na (peanut butter sauce) is the most popular dish. In the northern areas, milk, dates and wheat are important foods. Another delicacy is La Capitaine Sangha, a kind of Nile perch served with hot chilli sauce, whole fried bananas and rice. The bissap is a common drink made from hibiscus leaves that are boiled.
